Stuffed hot peppers are a traditional recipe from Calabria. As long as we can remember, there has always been a jar of stuffed round peppers in the house and there are many memories of late summer linked to the preparation of this preserve. Days when the whole family would gather in a laborious and organized assembly line: only the ones that were ripe enough and still fresh were collected, emptied, blanched and, after preparing the filling, filled these little spicy delights . Even today we make them in the same way in a 100% artisanal way with hand-selected vegetables in the OrtoBio Arangara fields, processed fresh as soon as they are picked.
They lend themselves to a thousand interpretations and everyone makes their own filling, ours has always included in addition to the tuna in oil from our trusted fisherman, capers in salt (which grow wild on our Tenuta di Jocana) and parsley. A very tasty mix combined with a pleasant spicy sensation.
Advice
Perfect for enjoying a tasty appetizer or side dish all year round. Serve them with croutons during an aperitif, they will be much appreciated. A little secret: don't throw away the oil from the jar, emulsify it with a little pasta cooking water and season a nice plate of spaghetti - finish the dish with plenty of parmesan and toasted breadcrumbs
